I would define it as the large scale cultivation of cells with the aim of producing a commercially viable product.
Traditional example: production of beer from yeast
Modern example: production of drugs from mammalian cells
It is essentially cross-discipline subject as a student learning about bioprocessing require knowledge from Chemistry, Biology and Engineering.
